RawSpice Bar was kind enough to send me another flavor kit last month to try. I was super happy since I'd already done a review before and I was quite impressed with the quality, flavor and the recipe cards that came along to try. Again, I received three small spice batches but this time there were six recipe cards to use, two recipes for each spice batch. 


Indo-French Vadouvan
cumin, coriander, turmeric, fenugreek, yellow and brown mustard seeds, 
green cardamom, aleppo pepper, cayenne, nutmeg, cloves and spices

Peppercorn Chai
black peppercorns, ginger, cinnamon, green cardamom, 
cloves, nutmeg, star anise and spices

Unpumpkin Pie Spice
ginger, cinnamon, allspice berries, star anise and nutmeg

Now, I know these recipes are not vegan but they can be adapted. For example: the vadouvan scrambled eggs can be easily made into a delicious tofu scrambled, the vadouvan leek and butternut squash soup needs to substitute the chicken stock for vegetable stock, and the baked pumpkin donuts needs to substitute the eggs for an egg replacer. And I'm looking forward to make them very soon! But I did recreate one to share with you today, I made the delicious peppercorn masala chai. Take a look:


Ingredients:
RawSpiceBar's Peppercorn Chai
3 cups almond milk
2 cups water
6 teaspoons sugar, to taste
6 teaspoons loose black tea leaves

Directions:
Pour all ingredients into a saucepan, over medium heat. Allow to heat until small bubbles appear around the perimeter of the milk. When the milk comes to a boil, turn off the heat and stir well. Bring to a boil once again, turn off the heat and stir well. Allow to steep for a few minutes. Strain carefully into teacups, and serve.
