Quinoa & Kale Salad with Red Cabbage, Carrot, Cranberries & Almonds

This beautiful colorful salad is delicious and with plenty of protein and a touch of sweetness from the cranberries and the strawberry vinaigrette. Take a look:


Ingredients:
1 cup cooked quinoa
2 cups chopped kale
1/2 cup chopped red cabbage
1/2 chopped carrot
1/3 cup dried cranberries
1/3 cup sliced almonds
Strawberry vinaigrette

Directions:
In a large bowl, combine quinoa, kale, red cabbage, carrot, cranberries and almonds. Pour the strawberry vinaigrette and toss really well. Serve and enjoy!
