Vegan Buffalo Chickpea Salad & Green Dressing

Chickpea is one of my favorite things to add to any salad, it's so full of protein and incredibly filling too! This salad is a bit spicy and with a creamy green dressing to cool off the buffalo sauce. Take a look:


Ingredients:
1 (15 oz) can chickpeas (drained, rinsed and dried)
1/3 cup buffalo wing sauce
1 romaine lettuce, chopped
1/4 cup vegan mayo
1 tablepoon vinegar
1 green onion, chopped
A handful of chopped parsley

Directions:
Pre heat oven to 400F degrees. In a bowl, combine chickpeas and buffalo wing sauce. Mix really well. Place the chickpea in a baking sheet and bake for about 15-20 minutes, until chickpeas are crunchy. In a blender or food processor, add the vegan mayo, vinegar, green onion and chopped parsley. Beat or pulse until creamy and smooth. Arrange the chopped lettuce in a serving dish, add the chickpeas and finish with the green dressing on top. Serve and enjoy!
