Farfalle with Sun-Dried Tomatoes & Spinach Cream Sauce (Farfalle com Molho Cremoso de Tomate Seco & Espinafre)
Alright, here's a final recipe to close this incredible year! This is a really old recipe of mine and quite delicious too, before it wasn't vegan but it was really easy to make the changes to adapt. I absolutely love the flavors of this pasta, the sauce it's super creamy with sun-dried tomatoes and spinach. Take a look:

Ingredients:
1 lb. farfalle (bowtie) pasta
2 cloves garlic, minced
1 white onion, diced
1 cup sun-dried tomatoes in oil
2 cups fresh spinach, chopped
1 1/2 cup vegan heavy cream
1/3 cup vegan grated parmesan cheese
Salt and black pepper
Directions:
In a large pot, add enough water and bring to a boil. Salt the water and add pasta, cook pasta until al dente; drain. Meanwhile, drain the sun-dried tomatoes and reserve oil. Heat a couple tablespoons of reserved oil in a large pan over medium/high heat. Add garlic and onion and sauté until onions are translucent. Add sun-dried tomatoes and let it cook for about a minute. Add the vegan heavy cream and bring to a boil. Cook until lightly thickened, season with salt and black pepper. Add spinach and once it's wilted, add vegan grated parmesan cheese and cooked pasta, toss really well. Serve hot and enjoy!

1/2k de macarrão farfalle (gravatinhas)
2 dentes de alho, picados
1 cebola branca, em cubinhos
1 xÃcara de tomate seco em óleo
2 xÃcaras de espinafre fresco, picado
1 1/2 xÃcara de creme de leite vegano
1/3 xÃcara de queijo parmesão ralado vegano
Sal e pimenta preta
Modo de preparo:
Em uma panela grande, adicione água suficiente e deixe ferver. Salgue a água e acrescente o macarrão, cozinhe até o macarrão ficar al dente; escorra. Enquanto isso, escorra os tomates secos e reserve o azeite. Aqueça algumas colheres de sopa de óleo reservado em uma panela grande em fogo médio/alto. Adicione o alho e a cebola e refogue até a cebola ficar translúcida. Adicione os tomates secos e deixe cozinhar por cerca de um minuto. Adicione o creme de leite vegano e deixe ferver. Cozinhe até engrossar levemente, tempere com sal e pimenta preta. Adicione o espinafre e, quando estiver murcho, adicione o queijo parmesão ralado vegano e o macarrão cozido, misture muito bem. Sirva quente e aproveite!
