The weather has been really cold lately where we live, cooking and eating soup seems to match perfectly to keep us warm. And this bean soup is super easy and takes just a few ingredients, nothing fancy, just simple good food. Take a look:

Ingredients:
1 lb. pink beans, rinsed and sorted
3 tablespoons olive oil
5-6 cloves garlic, minced
1 handful of chopped parsley
Salt and black pepper
Directions:
In a large pot, add the beans and pour 6-8 cups hot water. Bring to a quick boil, boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Drain soak water and rinse beans. Return the beans to the pot. Add 6 cups of hot water. Simmer gently with a lid tilted until tender, about 1 1/2 to 2 hours. Let beans cool, add the beans and liquid to a blender, beat until smooth. In a large pot, heat the oil over high heat. Add the garlic, sauté until golden in color. Pour the bean puree into the pot. Add the chopped parsley, season with salt and black pepper. Stir well. Let it simmer over low heat for 30 minutes. Serve and enjoy!
Ingredientes:
450g de feijão rosa, lavados
3 colheres de sopa de azeite de oliva
5-6 dentes de alho, picados
1 punhado de salsinha picada
Sal e pimenta preta
Modo de preparo:
Em uma panela grande, adicione o feijão e 6-8 xÃcaras de água quente. Traga a uma fervura rápida, deixe ferver por 2 minutos. Retire do fogo. Cubra e deixe descansar por 1 hora. Escorra água e lave o feijão. Retorne o feijão a panela. Adicione 6 xÃcaras de água quente. Cozinhe em fogo medio/baixo com a tampa meio aberta até o feijão ficar macio, cerca de 1 1/2 a 2 horas. Deixe feijão esfriar, coloque o feijão e o lÃquido em um liquidificador, bata até ficar homogêneo. Em uma panela grande, aqueça o óleo em fogo alto. Adicione o alho, refogue até dourar. Despeje o purê de feijão na panela. Adicione a salsinha picada, tempere com sal e pimenta preta. Mexa bem. Deixe cozinhar em baixo por 30 minutos. Sirva e aproveite!
