Here’s a quick and easy breakfast full of protein and flavor. The mixture between the tomatoes and beans creates such a great thick and beautiful sauce, paired with a toasted slice of your favorite bread which soaks up every bit of the sauce. Take a look:
Ingredients:
Bread slices of your choice, toasted
1 tablespoon olive oil
3 cloves garlic, minced
1 cup cherry tomatoes
1 can cannellini beans
Chopped parsley
Salt and black pepper
Directions:
In a large skillet, heat the olive oil over high heat. Add the garlic and tomatoes, sauté for about a minute. Cover and lower heat. Let it cook until tomatoes are tender. Add beans, season with salt and black pepper. Cover and let it cook until sauce has thickened. Add chopped parsley and serve it hot over toasted bread. Enjoy!
