Vegan Veggie Pie (Torta de Vegetais Vegana)

I love making savory tortes, this one you can get creative and add any vegetable that you love for a very satisfying meal. Take a look:

Ingredients:

For batter

1 1/2 cups flour

1 1/4 cups water

1/3 cup oil (vegetable or canola)

1 tablespoon of baking powder

1 teaspoon turmeric

Salt and black pepper

For filling

1 tablespoon olive oil

2 cloves garlic, minced

1 yellow onion, diced

1 cup of frozen mixed vegetables (corn, carrots, peas and green beans), thawed

1 small head of broccoli, chopped

Salt and black pepper

Directions:

For filling: In a large skillet, heat olive oil over high/medium heat. Add garlic and onions and sauté until onion is tender. Add all the vegetables, season with salt and pepper and sauté until vegetables are tender. Remove from heat and let it cool slightly. For batter: In a blender, add the water, oil and 1/2 cup of flour, beat until smooth. Add another 1/2 cup of flour and beat again, repeat again with the remaining 1/2 cup of flour. Add the baking powder, turmeric, salt and black pepper and beat again until smooth. To assemble: Pour half the batter into a greased 10 in round baking dish, add the filling on top of the batter, then pour the remaining batter to cover the filling completely. Bake in a pre heat oven at 350F degrees for 45-50 minutes. Serve hot or at room temperature. Enjoy!

Ingredientes:

Para massa

1 1/2 xícaras de farinha de trigo

1 1/4 xícaras de água

1/3 xícara de óleo (vegetal ou canola)

1 colher de sopa de fermento em pó

1 colher de chá de curcuma

Sal e pimenta preta

Para recheio

1 colher de sopa de azeite de oliva

2 dentes de alho, picados

1 cebola, cortada em cubinhos

1 xícara de legumes congelados mistos (milho, cenouras, ervilhas e feijão verde), descongelados

1 cabeça pequena de brócolis, picado

Sal e pimenta preta

Modo de preparo:

Para o recheio: Em uma frigideira grande, aqueça o azeite em fogo alto/médio. Adicione o alho e cebola e refogue até a cebola ficar macia. Adicione todos os legumes, tempere com sal e pimenta e refogue até que os vegetais estejam macios. Retire do fogo e deixe esfriar um pouco. Para a massa: Em um liquidificador, adicione a água, óleo e 1/2 xícara de farinha de trigo, bata até ficar homogêneo. Adicione outra 1/2 xícara de farinha trigo e bata novamente, repita novamente com o restante 1/2 xícara de farinha trigo. Adicione fermento em pó, curcuma, sal e pimenta preta e bata novamente até ficar homogêneo. Para montar: Despeje metade da massa na forma de torta untada com manteiga, adicione o recheio em cima da massa, em seguida, despeje o restante da massa para cobrir o recheio completamente. Asse em forno pré aquecido a 180C graus por 45-50 minutos. Sirva quente ou em temperatura ambiente. Aproveite!

Couscous with Carrot, Zucchini & Crunchy Chickpeas (Cuscuz com Cenoura, Abobrinha e Grão de Bico Crocante)

I always love to make couscous since it's fairly simple and easy to make and you can add any veggies and create many variations. Take a look:

Gosto sempre de fazer cuscuz já que é bastante simples e fácil de fazer e você pode adicionar qualquer legume e criar muitas variações. Dê uma olhada:

Ingredients:

1 (15 oz.) can chickpeas, drained and rinsed

1 tablespoon olive oil

1/4 teaspoon ground cumin

1/4 teaspoon paprika

1/4 teaspoon black pepper

1/4 teaspoon salt
1 cup water
3/4 cup couscous
1 zucchini, diced

1 carrot, diced

Juice of 1/2 lime

Salt and black pepper

Directions:
Preheat oven to 400 degrees. In a bowl, combine chickpeas, olive oil, cumin, paprika, salt and black pepper. Toss really well, transfer chickpeas to a baking sheet. Bake chickpeas until toasty and crunchy. Meanwhile, in a small sauce pan, bring water to a boil. Stir in couscous, add zucchini and carrot over the top, cover and remove from heat. Let it stand for 5 minutes. Fluff couscous with a fork, pour lime juice, season with salt and black pepper. Before serving, add the crunchy chickpeas and mix to combine. Serve and enjoy!

Ingredientes:

1 lata grão de bico, lavado e escorrido

1 colher de sopa de óleo de oliva

1/4 colher de chá de cominho em pó

1/4 colher de chá de páprica

1/4 colher de chá de pimenta preta

1/4 colher de chá de sal

1 xícara de água

3/4 xícara de cuscuz

1 abobrinha cortada em cubinhos

1 cenoura cortada em cubinhos

Suco de 1/2 limão

Sal e pimenta preta

Modo de preparo:

Preaqueça o forno a 200ºC graus. Em uma tigela, misture o grão de bico, azeite, cominho, páprica, sal e pimenta preta. Misture muito bem, coloque grão de bico em uma assadeira. Asse grão de bico até ficar tostadinho e crocante. Enquanto isso, em uma panela pequena, leve a água para ferver. Adicione em cuscuz e mexa, adicione a abobrinha e cenoura por cima, tampe e retire do fogo. Deixe descansar por 5 minutos coberto com a tampa. Com um garfo, misture o cuscuz e legumes, despeje o suco de limão, tempere com sal e pimenta preta. Antes de servir, adicione o grão de bico crocante e misture. Sirva e aproveite!
