3 cups flour
2 sticks butter, softened
1 cup sugar
2 eggs
1 teaspoon grated lemon zest

1 cup powdered sugar
8 oz cream cheese, softened
1 teaspoon vanilla extract

Sauce
2 cups cherries, pitted and cut in half
2 tablespoons sugar
1/3 cup water

Directions:
Crust: In a bowl, combine all the ingredients using your hands until a dough forms. Divide dough into small balls and press each ball over bottom and sides of each mini tart tin. Press the bottom using a fork to avoid dough from puffing up while baking. Bake at 375ºF preheated oven for 10-13 minutes or until it becomes yellow golden in color. Set aside to cool. Filling: Beat the heavy cream until soft peaks form, add powdered sugar, softened cream cheese and vanilla extract, beat well. Refrigerate cream until ready to assemble tart. Sauce: In small saucepan, heat all the add all the ingredients over high/medium heat. Keep mixing until the cherries soften, and sauce thickens. Remove from heat and let it cool. To assemble simply add a generous amount of filling on center of each tart and add sauce over the top. Serve and enjoy!
