There is nothing more rewarding than stepping into the backyard and seeing the garden thriving. This season has been especially exciting, with healthy plants, beautiful greenery, and lots of fresh vegetables. We've harvested more zucchini and collard greens than we can eat, which has given us the joy of sharing our harvest with neighbors. Now we're eagerly waiting for the tomatoes to ripen. The plants are looking healthy, and it won't be long before they're ready to pick and I can't wait to turn this summer's harvest into delicious recipes.
If you're looking for ways to use fresh zucchini, don't miss some of my favorites:
- Chickpea, Carrot & Zucchini Patties
- Zucchini Salad
- Spicy Grilled Zucchini Sandwich
- Pasta with Zucchini, Mushrooms & Broccoli
And if your garden is overflowing with collard greens, be sure to try my Collard Green Wrap, a fresh and healthy favorite. What has your garden been producing this summer? I'd love to hear what's growing in your backyard!
