RawSpiceBar was kind enough to send me a flavor kit last month to try. I was excited when I received my flavor kit since I love cooking and creating new recipes as well. I received three small spice batches and three recipe cards to use with each spice batch.

German Chicken Schnitzel

I decided to recreate one of the recipe cards and make a few changes to the recipe, I chose to make a german cauliflower schnitzel since I'm vegan and the recipe worked wonderfully. Take a look:

RawSpiceBar's Schnitzel Spices
4 slices of cauliflower
6 tablespoons vegan butter
2 cups breadcrumbs
3 tsp kosher salt
1/2 cup unbleached flour
1/2 cup unflavored soy or almond milk

In a large pan, add the cauliflower slices and cover if enough water to cover, add a pinch of salt. Bring water to a simmer. Let it simmer until cauliflower is tender. Remove from heat and drain. Combine flour, salt and RawSpiceBar's schnitzel spices in a wide bowl. Set breadcrumbs in separate bowl, as well as almond milk. Place each piece of cauliflower in the flour mixture, coating both sides, and shaking off any excess. Next, dunk the cauliflower into the milk, draining excess liquid, then coat liberally with breadcrumbs until covered on all sides. Place large skillet over medium high heat and add butter. Once butter is melted, add one piece of cauliflower and let it cook for 3-4 minutes or until golden brown. Flip and cook other side to golden brown. Repeat with remaining cauliflower. Serve hot out of the pan and enjoy!
